Tripuri staples, taken seriously. Smoked river fish, bamboo shoot, mustard greens, a wood oven that doesn't stop. The chef will feed you what's good today.

A serene waterside retreat, moored fifty metres out. Negronis, a clean martini, and the local rice spirit if you ask twice. Lanterns cast a warm, intimate glow across the water.

Breakfast in a skiff, rowed out to a quiet bend of the lake. Coffee gets there hot. Eggs are the chef's problem.

SIGNATURE · Eggs your way, toast with smoked butter, mango cut into the shape of a Sunday.

Khasi smoke, mountain pork, fermented bamboo, a wood oven that runs from breakfast to last call. The room is loud, on purpose, by 9pm.

SIGNATURE · Doh khleh, smoked pork, and the kitchen's millet bread. Get the bread twice.

A long cooler list. A longer one if you ask. House negroni is the move. Live music four nights, jazz on Sunday, the lawn becomes the dance floor after eleven.

SIGNATURE · Smoked old fashioned. Local rye, mandarin, a piece of pine bark in the smoker
