SMOKED PORK, ONION, GINGER, SESAME, THE RIGHT AMOUNT OF FIRE. THE WHOLE THING TAKES TWENTY MINUTES IF YOU'RE NOT NERVOUS.
Doh khleh is a Khasi pork salad. It is served at our table almost daily, and Chef will tell you it's a peasant dish, which is technically true and totally misleading.
§WHAT YOU NEED
Pork belly, 500g. Red onion. Ginger. Fresh chillies, your tolerance. Black sesame, toasted. Lemon. Salt. That's it.
§WHAT TO DO
Boil the pork until tender. Cool, dice small. Toss with everything sliced thin. Lemon and salt at the end, not before. Eat with rice or, better, with millet bread.
